Ingredients
- 1 T. unsalted butter, plus soft butter
- 1 T. flour
- 1/2 c. milk
- 1/4 c. gruyere cheese, grated
- salt and white pepper
- freshly grated nutmeg
- cayenne pepper
- 8 slices white bread
- 8 oz. sliced gruyere
- 6 oz. sliced ham
Directions
- In small pan,melt 1 T. butter.
- Add flour and cook, stirring constantly, until nutty, 1-2 min.
- In another pan over med., warm milk until bubbles form on edge.
- Whisk slowly into butter mixture until smooth.
- Bring to boil; reduce to low and cook 2 min.
- Stir in grated cheese and season.
- Cook sauce until thickened, 2-3 min.
- Transfer to a bowl and cool.
- Brush one side of each slice of bread with butter (outside).
- Spread sauce on inside; top sauce with cheese, ham, cheese, then bread.
- Season tops of bread with salt and pepper.
- Fry sandwiches.
