Scandinavian Almond Cake

Ingredients

  • cooking spray
  • sliced almonds
  • 1-1/4 c. sugar
  • 1 egg
  • 1-1/2 t. almond extract
  • 2/3 c. milk
  • 1-1/4 c. flour
  • 1/2 t. baking powder
  • 1 stick melted butter (1/2 c.)
  • confectionary sugar

Directions

  1. Spray pan with cooking spray, then sprinkle with sliced almonds.
  2. Beat well: sugar, egg, extract, milk.
  3. Add: flour, baking powder.
  4. Add: melted butter.
  5. Mix well then pour into pan.
  6. Bake at 350 for 40-50 minutes. Edges must be golden brown.
  7. Cool in pan before removing.
  8. Sprinkle with confectionary sugar.
