Ingredients
- 3 T. butter
- 1/4 c. flour
- 1 t. salt
- 1/4 t. pepper
- 1/8 t. nutmeg
- 1 c. milk
- 1 c. grated Swiss cheese
- 1 c. well drained finely chopped cooked spinach (1 box frozen chopped spinach)
- 3 eggs, separated
Directions
- Melt butter and blend in flour, salt, pepper, and nutmeg.
- Gradually add milk, stirring until well blended.
- Cook over low, stirring constantly until mixture is thick and smooth.
- Add cheese and spinach and cook until cheese is melted.
- Cool.
- Beat egg whites until stiff, but not dry.
- Beat egg yolks until thick and lemon-colored.
- Add yolks to spinach.
- Fold in whites.
- Pour into buttered 1 1/2 qt. souffle dish or straight-sided casserole.
- Bake at 325 F. for 45-50 minutes until inserted knife comes out clean.
